Description

UNITED STATES ATENT @trici-3,
ALBERT J. DOTY, OF NEIY YORK, N. Y.
BROILING-STOVE.
SPECIFICATION forming part of Letters Patent No. 447,750, dated March 3, 1891.
Application filed J' une 2 5, l S90.
To @ZZ whom t may con/cern:
Be it known that I, ALBERT J. DOTY, a citizen of the United States, and a resident of New York city, in the county and State of New York, have invented new and useful Improvements in Broiling-Stoves, of which the following is a specification.
My invention relates to gas-burning broiling-stoves; and it consists in an arrangement broiling-stove.
of the gridiron on pivot-ed parallel-motion supports to facilitate handling it for the application, inspection, and removal of the articles to be broiled; and it also consists in an automatic regulating device for partially shutting off the gas and reducing the iire by the withdrawal of the gridiron for removal of the cooked article and for turning it on again when the gridiron is replaced with another article to be cooked, all as hereinafter fully described, reference being made to the accompan ying drawings, in which- Figure l is a front elevation of my improved Fig. 2 is a sectional elevation of the same on line cv x of Fig. l, with the position of the gridiron when removed from the burners in dotted lines. Fig. 3 is a section of the gas-regulating cock.
The construction of the stove is substantially the same in the general features as heretofore made, a being the base; b, the broiling-oven; c, a series of burner-tubes located in the upper part of the oven, with issues clin the lower sides for projecting the gas-jets downward; e, the gridiron located a short distance below the burners for supporting the articles to be cooked, so that the downwardlyprojected jets will impinge on the upper surface; f, a slab of refractory material located above the burners forl reflecting the heat downward, and g a drip-pan located on the base below for collecting the juices falling from the gridiron above.
Heretofore the gridiron has been arranged on slideways generally attached to the inside of the side plates of the oven to be drawn out and shoved back to apply, inspect, and remove the articles to be cooked.
My invention consists in mounting the gridiron pivotally7 as at h, on the upper ends of supporting-standards t', which are also pivoted at their lower ends, as on shafts m, for a Serial No. 356,620. (No model.)
parallel-motion device enabling the gridiron to swing to and from its position 1n the oven, and I provide a spring-catch 7s, or, preferably,
the counterbalancing-weights Z, for holding the gridiron up to the burners, and may use both if required, though the weights will generally be sufficient. The spring-catch will prefthe shaft m, to which the rear standards t' are keyed, so that they may be made to swing upward by the weights through the instrumentality of the shaft. be adapted to nearly but not quite overbalance the gridiron and so as to hold it in its position under the burners, preferably with the pivots h, a little past the centers of pivots m to the right, and so that when the gridiron is swung down to the position indicated in dotted lines it will overbalance the weights and lie in that position while the cooked article is being removed and untilanother is put on to be cooked, when, with the'aid of a slight lift on the handle-rod n by the attendant, the gridiron will swing up to and be retained in the position for cooking by the weights.
The burner-tubes c are connected to the main gas-supply pipe 0, and each one has an injector-nozzlep7 with a regulating-cock q for controlling the supply of gas and utilizing it for inducing the supply of air through the inlet-passages s of the cap t attached to the front end of the tube and into which the nozzlep is screwed. In practice a register may be employed to regulate the quantity of air admitted to each tube.
In the gas-supply pipe I arrange the threeway cock fu, having the large way w for the full supply of gas for the working re and the small way x for a limited supply to reduce the lire for economy of gas while the gridiron is not in use, and I connect the arm y of this cock with a crank-pin z' of the pivot-shaft m of the front standards t' by a rod a in such relation that when the gridiron is up in the working position the large way w will be open The weights are to IOO lor the full supply and when it is down only the small way will be open.
My invention is more particularly designed for broiling-stoves et' large sizesuch as are used in hotels and restaurants-and have gridirons of such large size as to be dil'iicult and laborious to work by sliding them in and out, and in which such operation is rendered particularly difficult and inconvenient, because the stoves have to be ol such height that the cook can look into the space between the gridiron and the iiame to watch the progress of the cooking without stooping too low, which height is too great for enabling such heavy gridirons to be handled conveniently, and it is also too high for conveniently l1andling the articles cooking on the gridiron, as for turning them and the like.
Itwill be seen that the swinging con trivance ot' my device is much more convenient and less laborious to handle, and is especially advantageous in that the gridiron occupies the low position when withdrawn from the oven.
rlhe connecting-rod a is slotted at Zi for the pin of arm y, in order that the flame may not be reduced until the gridiron is withdrawn, and so that the flame will be in full force a little before the gridiron returns to the normal position again.
I claim as my inventionil. The combination, with the oven andthe downwardly-projccting burners located in the upper space therein, et the gridiron supported on the pivoted parallel-motion supports and having a holding device normally retaining it in the upper position, substantially as dcscribed.
i?. rllhc combination, with the oven andthe down wardly-proj cctin g burners located in the upper space therein, oi' the gridiron support-ed on the pivoted parallel-motion supports having a connterpoise device for normally retaining it in the upper position, substantially as described.
The combination, with the oven and the downwardly-proj ectin g burners located in the upper space therein, of the gridiron supported on the pivoted parallel-moton supports, the three-way cock in the gassnpply pipe and the connection of said cock with the moving support for automatically actuating it, substantially as described.
In testimony that I claim the foregoing as my invention I have signed my name, in presence of two witnesses, this 24th day of .'I'une, 1890.
