IMPROVEMENT |N APPARATUS FOR EVAPORATING SUGAR-JUICES.
Specification forming part of Letters Patent No. 23,270, dated March 15, 1859.
To aZZ whom it may concern.-
Be it known that I, JAMES SMART, of Mansfield, in the county of Itichland and State of Ohio, have invented a new and useful I1nprovement in Sugar-Evaporators; and I do hereby declare that the following is a full, clear, and exact description of the same, reference being had to the accompanying drawings, forming a part of this specification, in which- Figure 1 is a perspective view of a sugarevaporator with my improvements applied to it. Fig. 2 is a vertical longitudinal section of one section of the evaporator. Fig. 3 is an end View of the evaporator.

My invention consists, first, in the comhi nation of the inclined bottom A of the evaporatingpan B with a series of inclined zigzag partitions, O, which are furnished with passages l), which allow a circulation of the sirup in a zigzag line from the front to the rear end of the pan, said passages being covered with wire-gauze strainers 1* as shown. By inclining the bottom of the pan and setting the perforated partitions oblique to a line at right angles to the sides of the pan, in opposite direetions alternately, an automatic flowing of the sirup, and thus a more perfect boiling and reductionto the desired consistency, is effected, and scorching or burning avoided.
My invention consists, second, in the combination of two pans, B B, of the peculiar construction above described, and two flame chambers, G G, so that a communication between the pans by means of a pipe, F, and between the hot-air or flame chambers G G by means of a pipe, H, is effected at will, and a direct draft through the main hot-air or flame chamber (by means of the flue I) employed at the commencement of the boiling process, and then an indirect draft through the secondary chamber G (by means of the flue J) substituted for the main draft, the fines and pipes being provided with suitable dampers for controlling the flow of the sirup from one chamber to another and the action of the draft and the course of the heated current. By this arrangement, if the sirup is not reduced to the consistency of sugar or molasses when it arrives at the lower end of the main pan, the circulation and evaporation may be continued,
and a more perfect boiling of the same accomplished by opening the communication be tween the main and secondary pan-and between the main hot-air and secondary flame chambers, and by stopping the draft of the main hot'air or flame chamber and opening the draft of the secondary hot-air or flame chamber.
My invention consists, third, in fitting the evaporating-pans loosely over the hot-air or flame chambers, as shown, and supporting the same at or near the center'of their length by pivots a a, and at their ends by spiral springs b b, so that the pans may be oscillated independently of the chambers, and the sirup thus caused to pass back and forth in the pans, and thereby kept stirred up and saved from scorching when the necessity of the case may demand that the sirup shall be kept longer in contact with the heating-surface. It is thought that this agitation may not be necessary, on account of the bottom ofthe pans being inclined; but in case it is the arrangement I have shown for accomplishing the same will be found more convenient than others heretofore provided, as the pans are perfectly balanced, and it is only necessary, owing to their ends resting on springs, to alternately depress the ends of the pans.
My arrangement of evaporator, considered as a whole, is very simple, and, it is believed,
will answer most effectively for boiling down i the juice of sorghum to the consistency of mo lasses, sugar,
