left handed and right handed persons without any alterations or adjustments of the structure, and wherein means is provided to positively prevent too deeply cutting in the act of paring.
Another important object of my invention is to provide an arrangement of the character indicated which is composed substantially of only two parts, namely, the handle or grip portion, and the one-piece blade which may b turned out in a single stamping operation.
Other important objects and advantages of the invention will be apparent from a reading of the following description taken in connection with the drawings wherein for purposes of illustration I have set forth a preferred embodiment of my invention.

Figure '7 is a schematic view showing a portion of the device in operative relation to a potato or the like for eyeing operations, the dotted lines indicating progressive positions of the device as the eyeing portion is screwed into the potato.
Referring in detail to the drawings, the numeral 5 generally designates the device of the present invention which in the present instance is embodied in the form of a flat metal blank 6 which has a substantially parallel sided rectangular upper portion 1 which is inserted between two sections 8 and 9 forming the handle Ii], the sections and the blank portion 1 being held together by securing means such as rivets H and I2 traversing these parts so that the operative portion or blade of the knife extends below the handle. The blade 13 is somewhat wider than the portion l and has substantially parallel sides terminating toward their lower ends in slopes l4, l5, respectively, which merge into a point Is having the general outline of a locust leaf, the same being twisted into the form of a part of a left hand thread or screw with the slanting edge portions l4 and I5 merging gradually in conforming curves to meet the said point. Th portion I! lying above the slanting edges l4 and I5 is substantially flat while the side portions I 8 and I9 thereabove adjacent the side edges of the blade 6 ares lightly concavo-convex to provide the laterally outstanding centralized cutter 20 which is separated from the marginal side portions l8 and I9 by substantially parallel slots 2| and 22. The cutting portion 20 is provided at its convex side With cutting edges 23 and 24 which as shown in Figure 5 slant laterally inwardly so as to cause the cutting portion 20 to have a tendency toward the potato or the like while the blade is being moved over the surface of the potato or the like for paring the same, whereby any tendency of the blade to move away from the article being pared is eliminated. The surfaces of the marginal side portions 18 and I9 bear against the surface of the potato or the like being pared and positively prevent the cutting portion from cutting too deeply.
As indicated in Figure 7, an eye 26 may be removed from a potato or the like 21 by entering the point It on the lower end of the blade 6 into the eye and turning the entire device so as to screw the point 16 into the eye to the desired depth so that the slanting edges l4 and I5 may, in following the point I6, cleanly cut out the eye 26 without unnecessarily cutting away the surrounding meat of the potato or the like, thereby eliminating wasteful eyeing.
Although I have shown and described herein a preferred embodiment of my invention, it is to be definitely understood that I do not desire to limit the application of my invention thereto except as required by the scope of the subjoined claims.
Having described the invention, what is claimed as new is:
l. A device of the character described, said device comprising a flat metal plate formed with a pair of substantially parallel longitudinal slots defining a cutter, said cutter having the major portion thereof laterally offset with respect to one side of said plate, the inner corners of the longitudinal edges of said cutter being beveled to define cutting edges angularly spaced from the said side of the plate.
2. A device of the character described, said device comprising a flat metal plate formed with a pair of substantially parallel longitudinal slots defining a cutter, said cutter having the major portion thereof laterally ofiset with respect to one side of said plate, the inner corners of the longitudinal edges of the cutter being beveled to define cutting edges angularly spaced from said side of the plate, the portions of the said side of the plate alongside said cutting edges being curved away from said cutting edges to provide convex surfaces for guiding the course of the cutter while engaged with the potato or the like being pared.
3. A device of the character described, said device comprising a fiat metal plate formed with a pair of substantially parallel longitudinal slots defining a cutter, said cutter having the major portion thereof laterally offset with respect to one side of said plate, the inner corners of the longitudinal edges of said cutter beingbeveled to define cutting edges angularly spaced from the said side of the plate, the portions of the said side of the plate lying on opposite sides of said cutter being curved toward the opposite side of the plate to provide means to guide the device to make a cylindrical cut when rotated on its axis, the lower part of the longitudinal edges of said plate being laterally inwardly slanted, and the resultant narrow lower extremity of said plate being twisted to provide a screw for starting the device in the potato or the like to be cored.

A device of the character described, said device comprising a handle having a relatively flat elongated plate connected to extend axially from one end of the handle, a longitudinally extending blade defined by a pair of parallel longitudinal slots formed in said plate, said blade having the inner corners of its longitudinal edges bevelled to define cutting edges with the bevelled surfaces spaced angularly from the adjacent side of the plate, the resultant passages providing entrance and exit for a strip cut from a potato or the like by one of said cutting edges and passing behind said blade, the surface of the said adjacent side of the plate along said slots being laterally outwardly curved rearwardly in a direction away from the cutting edges to provide convexities for riding on the surface of the potato or the like while one of the cutting edges is in operation.

A device for coring fruits and vegetables and the like, said device comprising a handle having an elongated relatively flat plate projecting axially from one end thereof, a longitudinally extending blade defined by a pair of parallel longitudinal slots formed in said plate, said blade having the inner corners of its longitudinal edges bevelled to define cutting edges at the outer corners, the bevelled surfaces being angularly spaced with respect to the adjacent side of said plate, said bevelled surfaces and the outer edges of the said slots defining passages comprising entrance and exit for a strip of potato or the like cut by one of said edges and passing behind said blade as the device is turned on its axis in a potato or the like.
6. A device according to claim 5 wherein said blade is substantially flat and plane and offset from the said adjacent side of the plate.
7. A device according to claim 5 wherein said blade is substantially fiat and plane and oifset from the said adjacent side of the plate, the portions of the plate residing at the outer edges of said slots being concave-convex and rearwardly curved to guide said blade in a radius of curvature corresponding to the size of the core to be cut as the handle is axially rotated.
