This invention relates to certain new and useful improvements in vegetable knives and particularly to the type having a guard associated with the cutting edge of the blade for varying the thickness of slices, the invention embodying a guard element that is capable of being shifted to a position 'remote from the cutting edge of the blade when out of use. i
The primary object of the invention is to provide a vegetable knife of the above type wherein a handle removably receives the shank of a cutting blade while the guard for the cutting blade is carried by a collar rotatably adjustable on the hand with respect to the cutting edge of the blade, the outer end of the blade having a sharpened finger extension for effectively removing eyes and surface pits from different fruits and vegetables.
With the above and other objects in view that will appear as the nature of the invention is better understood, the same consists in the novel form, combination and arrangement of parts hereinafter more fully described, shown in the accompanying drawing and claimed.

Referring more in detail to the accom panying drawing, there is illustrated a vegetable knife comprising a handle 1 having a reduced annular neck 2 at one end upon which the annular bearing collar 3 is mounted and retained by frictional contact therewith. A rotatably adjustable sleeve 4 is mounted u on the collar 3 with the outer face thereo flush with the handle 1 as shown in Figures 1 and 2. The sleeve 41S retained in position on the collar 3 and handle 1 by the circular cap plate 5 that is mounted on the outer end of the reduced neck2 of the handle and there retained by the screw 6 passing through the opening 7 in the cap plate 5 and threaded into the opening 8 in the handle neck 2, the assembly formation being shown in Figures 1 and 2;
The handle 1 and neck 2 are provided with an end opening bore 9 with which the opening 10 in the cap plate 5 registers for the passage of the shank 11 of the blade 10, the blade 12 and cross screw 13 being'threaded into the opening 14 in the handle 1 for engaging the shank 11 that is'received in the bore 9 to retain the blade in position, The blade 12 is provided at its outer end with a laterally projecting shar ened finger 15 to facilitate the removal 0 eyes and surface pitsfrom fruit and vegetables;
A longitudinally extending guard rod 16 is carried by the sleeve 1 and has one end rigidly disposed in a tubular bearing 17 projecting laterally from the sleeve. The sleeve 4 in proximity of the tubular hearing 17 is provided with a threaded boss 18 through which a stud screw 19 is threaded for engagement with the collar 3 for holding the sleeve 4 in rotatably adjusted position.
The guard rod 16 may be disposed adjacent the rear edge of the cutting blade 12 when out of use and is capable of being shifted by rotatably adjusting the sleeve 4 to a position adjacent the cutting edge of the blade as shown in Figures 2 and 5 and so retained by the screw 19; The thickness of a cut is regulated by positioning the guard rod 16 atdifi'erent points in proximity of the cutting edge of the blade 12 and an example of the use on the vegetable is illustrated in Figure 5. WVhile there is herein shown and described the preferred embodiment of the present invention it is nevertheless to 'be understood that minor changes may be made therein without departing from the spirit and scope of the invention as claimed.
