IMPROVEMENT IN MEAT-TENDERERS.

Specification forming part of Letters Patent No. 159,393, dated February 2, 1875; application filed December 2l, 1874.

CORNISH, of Marshfield, in the county of Webster and Stat-e of Missouri, have invented certain new and usefullmprovements in Beef-Steak Manglers; and I do hereby declare that the following is a full, clear, and exact description thereof, which will enable others skilled in the art to which it pertains to make and use the same, reference being had to the accompanying drawings, and to the letters of reference marked thereon, which form a part of this specification.

The nature of my invention consists in the construction and arrangement of a beef-steak mangler, as will be hereinafter more fully set forth.

In the accompanying drawings, Figure l is a plan view 5 and Fig. 2is a side elevation, partly in section.

A represents a bed-plate of any suitable dimensions, to be placed upon and fastened on top of a table, along the edge thereof. At

-one end of the bed-plate A is a flange, B, on

top of which is secured a spring-bar, O, which extends above the bed-plate nearly to the other end thereof.' On the under side of the spring-bar O is secured a wedge-shaped piece, a, or the bar may be formed with such wedge in one piece. Against this Wedge works a toothed wheel, D, secured on a shaft, b, which has its bearings in ears or projections, d d, on the bed-plate, and provided at its outer end with a crank, E. The teeth of the wheel D are set at an angle, as shown, so that, by turning the crank, the teeth, acting against the wedge a, will raise the spring-bar, and as each tooth in succession clears said wedge, the spring-bar will suddenly spring downward. On the outer or free end of the spring-bar O is placed a head, G, having a central slot for the passage of the end of the spring-bar, the head being held thereon by a wire key, e, or

head G is grooved or otherwise cut to form a number of small hammers, H represents a plate provided with a handle, I, upon which the steak is to be placed. This plate is to be moved with the left hand, while the crank E is turned by the right hand, so as to bring every part of the steak under the hammerhead. By the operation of the toothed wheel D against the wedge a the head will give a succession of sharp blows in the same spot but as the plate H is being continually moved by the left hand, every part of the meat may be brought under the hammers, and any part that would need more pounding than others may be held under the hammers sufficiently long to receive any num ber of blows. On the upper end of the head G are secured two or more knife-blades, m m. The head may be reversed on the spring-bar, so as to bring the knives downward, when the machine may be used for cutting mince-meat, Sto., in the same manner as above described.

Having thus fully described my invention, what I claim as new, and desire to secure by Letters Patent, isy l. rIhe combination of the spring-bar O with wedge a, the reversible head G, and toothed wheel D, as and for the purposes herein set forth.

2. The combination of the bed A B, springbar O, with wedge a, shaft b, with toothed wheel D, crank E, and reversible head G, all constructed and arranged to operate substantially as and for the purposes herein set forth.
