SMOKE-GENERATOR FOR SMOKING MEATS.
Specification of Letters Patent.
Patented July 23, 1918.
Application filed November 5, 1917. Serial No. 200,275.
To all whom it may concern:
Be it known that I, IsAAo Pownns, a citizen of the United States of America, residing at Terre Haute, county of Vigo, State of Indiana, 1535 South Center street, Terre Haute, Ind, have invented certain new and useful Improvements in Smoke-Generators for Smoking Meats, of which the following is a specification.
This invention relates to smoke generators for smoking meats, and particularly to smoke generator equipments of the gas-fired type.
More particularly the invention, in its preferred forms, comprises a frame constructed to be positioned within a smokehouse or other suitable inclosure, said frame being of the open-bottom type adapted to contain saw dust or the like and effect the desired smoking of the meats suspended or otherwise placed within such inclosure. Suitable priming or initial ignition means is arranged in proper relation to the frame, as will be understood.
The generator is preferably operated by the utilization of saw dust, which is slowly ignited to produce the desired degree of smoke concomitant with ignition.
Further features and objects of the invention will be more fully understood from the following description and the accompanying drawings, in which- Figure 1 is a vertical section of a smokehouse provided with a smoke generator;
Fig. 2 is a side elevation of the smoke generator, Fig. 1; and
Fig. 3 is a top plan view of Fig. 2 but having a portion of the canopy broken away.
Referring to the drawings, the smokehouse is indicated diagrammatically at 1, said smoke-house being of any desired form of internal contour and preferably of the type having an ash pit of any approved construction.
The smoke generator may be described generally as a frame or open bottom container constructed to be positioned within the ash pit of the smoke-house 1. The generator as shown is especially constructed for the utilization of saw dust or like combustive material having a high content of volatile carbonaceous ingredients capable of effecting the desired curing of meats as is understood in the art.
The saw dust or the like is indicated at 3, and may be placed within the container by pouring the same through the open top 4, whereupon the saw dust 3 flows through the open bottom 5 onto the bottom 6 of the smoke-house 1 or fire pit.
The container 2 comprises preferably the oppositely disposed side plates 7, 7 and the oppositely disposed end plates 8, 8. The container 2 may be of an elongated rectangular shape as shown, the particular shape, however, being determined by the particular interior construction of the smokehouse 1.
The container 2 is shown supported by the legs 9, such as L-bars, which may also serve to connect the abutting joints of the side plates 7 and end plates 8 as indicated in the drawings.
Preferably, a canopy 10 is employed and adapted to normally project above the container 2 to prevent drippings of the meat from dropping within the frame 2 or into the fire pit 6. It is convenient to construct the canopy 10 of the pivotal type as by pivoting the same to one side 11., and to provide the counterweight 12 attached by means of the flexible rope 13 to the eyes 14, on the canopy 10, to facilitate removing the canopy when desiring to fill the container with saw dust or on other occasions.
I have shown the container 2 provided with the burners 15 suitably connected with a supply of ignition gas for the purpose of starting the combustion of the saw dust or the like. The ignition zone of the pile of saw dust is disposed substantially below the frame 2. The burners 15 are shown having their burner openings 16 all directed toward that portion of the pile of combustible material disposed below the sides of the frame 2.
Preferably, I also provide the air pipes 17, 17, having one or more sets of jet ope'nings 18 directed toward various portions of the pile of saw dust.
The oppositely disposed baffle plates 20, 20, are provided to intensify the ignition effect of the flames projected from the burners 15 and to also intensify the injection of the air projected by the pipes 17.
The legs 9 may be extended upwardly as indicated by 19, to provide a rest for the canopy 10 when in normal position.
The pilot burner 21 may be provided to facilitate the starting of the gas burners 15, 15.
The frame 2, legs 9, extensions 19 and r to said fuelt for. smoking meats comprisingthe combination with an inolosuretor the. meats,ot a frame havingwan open bottomadapted to contain saw dust bati'le plates 20 may be formed of steel, or
other plate metal or similar rigid material 7 capable of withstanding the temperature and products of combustion evolved upon,
the combustion of the fuel.
Furthermodifications and changes maybe made Without departing-from the scope of the invention as defined by the appended claims.
