Beit known that I, JOHN F. VVILLSON, a citizen of the United States, residing at Tampa, in the county of Hillsborough and State of Florida, have invented certain new and useful-Improvements in Canning'Devices, of which the following is a' specific tion. a;
This inventionrelates to a canning devic and has for its object to provide a steaming compartmenthaving a water seal.
Another object of the invention is to provide a "steamerhaving a cover formed of a pair of spaced apart walls to form a water passage.
Still another object of the invention is to provide a steamer having means whereby pressure without danger may be had in order to obtain a higher temperature in the steam compartment.
And a stillfurther object of .the invention is to provide a steamer having a water sealed closure and -means for relieving vacuum in the steam chamber to more readily= relieve the cover.
With the above andsuch other objects in view as may hereinafter appear, I have invented the' steamer illustrated in the accom panying drawings, in which Figure l is an elevational view of my de- V106,

Like reference characters indicate like parts throughout the following specification and in the several views in the drawings, in which 1 represents my canning device which consists of an outer casing 2 having side walls 3 and 4 and end walls 5 and 6. The casing forms a steam generating chamber 7 which is kept supplied with water to about the level 8 as shown, and a steam chamber 9. This chamber 9 is reduced in size having a Water seal trench 10 entirely around its four sides, said trench being formed by the four walls of the outer casing 2 and the four walls 11, 12, 13 and 14 of the steam chamher 9. A furnace or fire box 15 is suspended in the lower part of the chamber 7 and is provided with a fuel and air inlet 16 and an Specification of Letters Patent.

the bottom of the trench 10, the flange also projects far enough inwardly beyond the walls 11 to 14 to form a. seat for the tray 24, which is adapted to hold thegoods being canned. The bottom of the tray is. perforated at 25 to permit of free-passage ofv the steam. The fire box has water tubes 26 and 27 extending transversely'therethrough, the former inclining in one direction and the latter in an opposite direction to form" in a way baffle plates to retard the passage of the products of combustion in order to more thoroughly heat said'tubes. At the rear of the fire box, an enlarged vertically disposed tube 28 extends entirely through the fire box and communicates with the water chamber 7 as do the tubes 26 and 27 The tube '28 is directly in the'path --of the outlet 17 of the fire box and also forms a baffie plate to further retard the products of combustion. Thesetubes permit a circulas tion of water. through the firebox whereby the steam ismore readily generated.
A closure 29 is provided for the device which consists of a pair of spaced apart similarly formed members 30 and "3l,-the vertical walls 32 and 33 of which are adapted to seat in the trench 10 and these walls 32, rest upon the flange 23. The trench 10 is filled partially with water to form a water seal for the device when the cover 29 is in place. This cover is provided on top with a pair of handles 34 and 35 which are slidable in straps 36 and 37 whereby the ends 38 and 39 may engage catches 40 and 41 on the walls 5 and 6 whereby the cover is held against raising by steam pressure. Openings 42 are provided in the upper wall 43 of the cover 29 and an outlet 44 extends entirely through the cover and enters the channel 45 on the cover at one end of which is a valve 46 which is adapted to control the opening 47 between the channel 45 and the space 48 between the two walls of the cover. Necessary air to permit easy removal of the closure by relieving the partial vacuum which would otherwise be formed thereunder, will be drawn through the openings 42, then through the valve opening 47,
Having now described my invention, that which I claim to be new and desire to procure by Letters Patent is:
1. A steam cooker comprising a boiler including inner and outer shells forming a water seal therebetween and open at their tops, a cover formed of a hollow top and a hollow continuous wall depending therefrom, said top resting on said inner shell and said wall being positioned loosely between said shells and having an open hottom, means for admitting air into the space within said hollow top, and means for conducting said air into said inner shell.
2. A steam cooker comprising a boiler including inner and outer shells forming a water seal therebetween and open at their tops, a cover formed of a hollow top and a hollow continuous wall depending therefrom, said top resting on said inner shell and said wall being positioned loosely between said shells and having an open bottom, means for admitting air into the space water seal therebetween and open at theirv tops, a cover formed ofa hollow top and a hollow continuous wall depending therefrom, said top resting onsaid inner shell and said wall being positioned looselybetween said shells and having an open bottom, the upper portion of said top having air inlet openings for supplying air to the space within said top and wall,'said upper portion of the top also having an additional opening communicating with said space, an upstanding annular wall rising from the 10p around said additional opening, a plug within said wall for normally closing said opening, a vertical passage passing through the entire top-at a distance from said additional opening, and an external passage extending along the top and inclosing said vertical passage and said wall, said external passage having a removable closure above said plug.
