IMPROVEMENT IN CHEESE-VATS.
Specification forming part of Letters Patent No. 123,107, dated January 30, 1872.
" SPECIFICATION.
We, JONATHAN JONES, CHANDLER D. FAULKNER, FRANCIS L. JONES, and HORACE K. FAULKNER, residents of Utica, Oneida county, and State of New York, respectfully represent that we have invented a new and useful Arrangement. of Stationary Steam- Pipes for the equal diffusion of steam in vats used in the manufacture of cheese, the same being an improvement on the arrangement of movable steam-pipes patented by and W. A. Stuart, February 21, 1871., and reissued June 6,1871. We therefore ask that Letters Patent may be granted us for the same reference being had to the drawing and iig ures marked thereon forming a part of this specification.
To enable others skilled in the art to which our invention belongs to manufacture and use the same, we will proceed to describe its oon.- struction and operation.

sufficient strength to withstand a pressure of three or four tons weight. Fig. 2 is the inner vat, to be made of tin or other metal attached to a wooden frame at the top, the under side of which forms a flange to cover the outside vat, making a perfect joint to prevent the escape of steam, which we int-end to use for the purpose of warming milk and making into cheese.

and eight inches apart, more or less, the holes in the upper pipes being in the top and in the lower pipes on the side. The lower pipes throw jets of steam horizontally toward each other under the inside vat, thus preventing the direct contact of the steam with the inside milkvat. The steam from the upper pipe on either side is thrown up through the holes in the top perpendicularly, thereby avoiding direct contact with the inside milk-vat. Thus the steam issuing from all the pipes at once fills both sides, bottoni, and all parts of the Steam-chamber at the same time gently and equally, the quantity being regulated by common steamvalves.
Claim.
What we claim as new, and wish to secure by Letters Patent, is-
The arrangement of the double stationary perforated steam-pipes A A, B B, as herein described, the pipes A A perforated at the top and the pipes B B at the sides, by which steam may be admitted solely at the two sides of the milk receptacle, or solely at the bottom, or simultaneously at both sides and bottom, substantially as specified and set forth.
