Abstract

A method for the preparation of protein food enriching agent from yeast provides for enzyme hydrolysis of yeast biomass with lytic ferment preparation. In order to intensify the enzyme hydrolysis process and to increase biological and feeding value of the product the hydrolysis is carried out at temperature of 51-55°C for 3-5 hours with further biochemical treatment of hydrolysate with ascorbic acid and wheat flour at temperature of 27-30°C.
