Abstract

A method for obtaining an emulsion on the base of sunflower seed kernels comprises preparing oil seed kernel, hydrothermal treatment thereof, desintegrated up to homogenous paste consistency and emulsifying an additionally introduced fat component. In doing so sunflower seed kernels of the confectionery type with high protein content are used as oil seed kernels, and deodorated refined sunflower oil is used as the additionally introduced fat component.
