Abstract
Marsh-mellow contains a gelling agent, a foamer, a sweetener, a filler, an acidifier, a stabilizer, a modifier, a flavouring additive and a colourant. Fructose and sorbit are used at a ratio of 1:1.4 as the sweeteners, apple and Jerusalem artichoke puree in a ratio of 1:3 as the fillers, citrus pectin is used as the gelling agent, egg white as a foamer, glucose syrup as a stabilizer, lactic acid as an acidifier, sodium lactate as a gel modifier.
