Check white wine “Siome nebo kniazia Golitsyna” includes wine materials of the sorts Muscat white, Muscat pink, Cocur white. Method of production of check sweet white wine prescribes processing of grapes of vine sorts Muscat white, Muscat pink, separately – processing of the grapes of the vine sort Cocur white, this comprises of milling with pulp obtaining, separation of crowns, sulfitation, pulp soaking, separation of must from the pilp, with addition of pure yeast culture for additional fermentation, with alcoholyzing and clarification; keeping wine materials, with open pouring at the first year, closed pouring at the second year; wine materials of the sort Cocur white are blended with the wine materials of the sorts Muscat white, Muscat pink at the second year.
