Abstract
Спосіб виготовлення смажених страв з натурального м'яса відноситься до харчової промисловості і передбачає підготовку м'ясної сировини, її нарізку, механічну обробку, ферментацію протеолітичним ферментом та смажіння. Для ферментації м'яса в даному способі використано протеолітичний ферментний препарат протомегатерин Г20Х, що дозволяє розширити сировинну, базу для виготовлення смажених страв, скоротити термін їх теплової обробки при зберіганні високої харчової цінності та добрих органолептичних показників готової продукції.The method of making fried dishes from natural meat belongs to the food industry and involves the preparation of raw meat, its slicing, machining, proteolytic enzyme fermentation and frying.
