The invention relates to a method for obtaining a frozen heat-resistant filling, which includes preparing the components, namely sugar, raw milk, structure-forming agents, swelling, keeping, heat treatment, cooling, and applying thereof, as well as adding starch syrup and boiling up the obtained mixture with further storage thereof. According to the invention, a mixture of low etherified citrus pectine and modified maize starch is used as the structure-forming agents, and in order to form calcium bridges, calcium citrate is used, nonfat dry milk is used as the raw milk, deodorated refined sunflower oil is used as the fat component, in order to increase the shelf life, the product is subjected to low-temperature treatment at a temperature of -18±1 °C.
