Abstract
Спосіб виробництва пектинової пасти передбачає подрібнення пектиновмісної рослинної сировини, гідроліз її розчином молочної кислоти, упарювання, додавання цукрового розчину. Як пектиновмісну сировину використовують гарбуз. Гідроліз здійснюють при температурі 80 - 85°С протягом 60 - 65 хвилин при гідромодулі ГМ = 15 - 16, потім після додавання цукрового сиропу здійснюють упарювання на водяній бані при температурі 90 - 95°С протягом 60 - 70 хвилин до вмісту сухих речовин 68 - 70%.
