Abstract
The present invention provides a delicious soybean milk and preparation thereof which includes an over specific quantity of nutritional γ -aminobutyric acid and tasting heavy and tasty. The soybean milk of the present invention includes γ -aminobutyric acid which the quantity is over 13 mg per 12.5 g of solid ingredient and glutamic acid which the quantity is over 13 mg per 12.5 g of solid ingredient. Therefore, the soybean milk has high nutrition and tastes heavy and tasty. Furthermore, the raw material of the soybean milk is budding process soybean which mixes the powder of the soybean with water, or erases water insoluble ingredient, to keep ordered time under ordered temperature. Therefore the quantity of the γ -aminobutyric acid and glutamic acid are both over 13 mg per 12.5 g of solid ingredient in the budding process soybean milk, and subsequent processes the step of inactivating enzyme to inactivate enzyme to produce the product of the present invention.
