Abstract
A gluten-free seed powder and the manufacturing method thereof are provided, wherein the gluten-free seed powder is made by following steps: First, a mixed solution is made of a raw seed powder. Then, a protein hydrolysis process is conducted on the mixed solution, wherein the operating temperature of the hydrolysis process ranges form 30 DEG C to 70 DEG C, and the pH of the mixed solution ranges from 3 to 7. Subsequently, a dehydration process is conducted; wherein the dehydrated product maintains the original composition of the amino acids and carbohydrates possessed by the raw seed powder, and reduces the gluten less than 200ppm measured by an ELISA assay.
