This invention is about the extrusion process used in the production of diet products containing a high rate of diet fiber. In this process, the product is baked in a rotating oven, during 10-20 minutes under 130-170 degrees C. The mixture is fed with a speed of 50-100 kg/hour and the screws that provides the forwarding motion turns with a speed of 100-90 rpm. The cooking is realized with resistances in, respectively, the temperatures 175 degrees C, 185 degrees C, 195 degrees C and 210 degrees C. The pressure applied to the mixture during the process is 70-86 bars and the speed of the cutters is 15-20 m/mn.
