Description

The giant colony is dull, the edge is slightly scalloped, radial folding is poorly pronounced. In the center of the colony is a crater. The color of the colony is light beige.

Attitude to carbohydrates. Sprays glucose, fructose, galactose, sucrose and maltose. Raffinose ferment completely. Lactose and arabinouso absorbs poorly.

Attitude towards organic. Poorly absorbs acetic, lactic, tartaric and citric acids.

Attitude to alcohols. Weakly absorbs ethanol, glycerin, mannitol, dulcite and sorbitol

Fermenting malt wort at t 6- C, refers to downstream brewing yeast, flocculating.

Production verification of strain 7O-9 was carried out for 96 days.

The proposed strain is introduced into the wort with the continuous production of beer, the fermentation process is carried out according to known technology.

1.Data on the fermentation process of raffinose wort are presented in Table. one.

2,Beer, obtained in the factory with the use of yeast strain 70-9, has a good taste, contains less volatile components of diacetyl and acetsin, impairing the taste of beer, which is reflected in the table. 2,

The proposed strain allows improving the taste of beer, increasing the tasting score from 91.3 to 93.0 and reducing production losses.

The loss of the liquid phase in the separation of yeast from the young beer, as well as due to wetting when using yeast 7O-9, decreased by 0.08% per year.
