Предлагаемый согласно изобретению способ повышени  стойкости карамели против намокани  дает возможность предотвратить намокание (увлажнение и осахаривание) карамели при длительном хранении.The method according to the invention for increasing the resistance of a caramel against wetting makes it possible to prevent the caramel from becoming wet (moisturized and saccharified) during long-term storage.

Способ заключаетс  в том, что карамельную массу до формовани  подвергают обработке на т нульной машине. Проведенные производственные испытани  подтвердили целесообразность способа. Карамельную массу, изготовленную по нормальной рецептуре (100 частей сахара и 50 частей патоки), после подкислени  и ароматизации подвергали обработке на т нульной машине в течение 5-8 минут при температуре около 70°, а затем формовали обычным путем. Обработанную на т нульной машине карамель и (дл  контрол ) нет нутую карамель помещали в различную тару (бюкс открытый, коробки) и ставили на хранение в помещении с мен юОтв . редактор М. М.
