Изобретение относитс к способам очистки масел и жиров, а именно к способам их гидратации, и может быть использовано в масложировой промышленности . Известен способ гидратации масел и . жиров водой l . Недостаток этого способа аключа етс в том, что он не обеспечивает сохранени в неизменном виде глицеридной части жиров, поскольку из ма ла вывод тс естественные антиокислители - фосфориды. Наиболее близким к предлагаемому вл етс , способ гидратации масел и жиров путем обработки их гидратирую щим агентом - водным раствором антиокислител с последующим отстоем и удалением осадка 2. Антиокислителем в этом.способе вл етс танин Однако и этот способ не предотвр щает окислени масел и жиров при их дальнейшем хранении. Так, актива рами окислени вл ютсй содержащиес в маслах металлы - железо, никель, медь и т.д. Цель изобретени - повысить стой кость масел и жиров к окислению. Дл этого в качестве гидратируюшего агента испЬльзуют водный экстракт соплодий - шишек ольхи черной или ольхи серой, вз тый в количестве 1-3% от веса масла, причем после введени экстракта масла подвергают воздействию магнитного пол напр женностью 850-1250 эрстед. Водный экстракт шишек - соплодий ольхи серой или черной приготовл ют следующим образом. На 1 кг сухих шишек ольхи берут 50 л кип тка (конденсата) и настаивают в течение 6-7 дней, затем фильтруют и полученный экстракт примен ют по назначению. Экстракт содержит 99% воды и 1% экстрактивных веществ. При вводе в масла и жиры указанного экстракта шишек ольхи последний не придает им специфических запахов и цвета. Водный экстракт шишек ольхи, обладающий антиокислительной способностью , целесообразно вводить лишь на стадии гидратации масел и жиров, так как с водой, содержащейс в экстракте , взаимодействуют фосфатиды - происходит гидратаци , разбухание, потер растворимости в масле и выпадение фосфатидой в осадок с последующим выведением этого осадка из масла, а вещества экстракта (флавоновые глюкозиды , тритерпеноиды, дубильные ве щества, галлова, , кофейна , хлорогенова , протокат хинова и др. кислоты ) св зывают ферропримеси (железо, никель, кобальт и др.) и тем самым ликвидируют их каталитическое действие к окислению липидов в гидратированных маслах и жирах. Экстракт шишек ольхи оказывает благопри тное вли ние ч на фосфатиды Он предотвращает окисление фосфатидов как оставшихс в масле после их гидратации, так и в самом гидратационном осадке.
