Изобретение относитс к пищеконцентратной промышленности и касаетс способа производства кофейного экстракта. Цель - повышение качества и сокращение энергозатрат. Кофейный экстракт получают следующим образом. Провод т первичную экстракцию кофе при 90-100°С в течение 3-5 мин при PH 4,7-5,0. Воду и кофе берут в соотношении 1:20-1:25. Отдел ют экстракт. Твердую фракцию подвергают гидролизу путем воздействи целлюлозногемицеллюлазного, В - глюканазного и пектиназного комплекса ферментов в количестве 0,1-1,0 % на 100 г сухого вещества при 43-63°С в течение 0,5-1,0 ч при PH 4,7-5,0 при посто нном перемешивании.
