Description
The invention relates to the field of storage and processing of agricultural products and can be used in the agricultural, food and processing industries to assess quality and detect spoilage of potatoes during storage.
Цель изобретени - повышение точности путем определени степени и глубины поражени картофел .The purpose of the invention is to improve the accuracy by determining the degree and depth of damage to potatoes.
е. количество (массу) пораженных клубней, а количество ацетона и метилэтилкетона - глубину поражени клубней картофел .In the gaseous products released by potatoes, the content of ethanol, acetone and methyl ethyl ketone is measured and judged by their ratio the degree and depth of damage to the potato tubers. The amount of ethanol released characterizes the degree of damage to the potato, i.e., the amount (mass) of affected tubers, and the amount of acetone and methyl ethyl ketone, the depth of damage of potato tubers.
After the potato has been infected with microorganisms, such as wet root rot of Ervrinia Carotovora, a sharp increase in ethanol release occurs over time. This is due to the rot of healthy mass of tubers, i.e. an increase in the degree of damage, and the amount of ethanol released is approximately proportional to the initial degree of infection. Since the release of acetone and methyl ethyl ketone takes place. Since only the tubers initially infected with decay are rotting, this is an intense release. acetone and methyl ethyl ketone is coupled with an increase in the degree of lesion tubers.
The drawing shows a graph of the ethanol release (1) and the total amount of acetone and methyl ethyl ketone (2) as a function of the storage time of potatoes at room temperature.

Determination of the quality of potatoes during storage is carried out as follows.
An analyzed sample of potatoes is placed in an airtight container, closed and stored. Periodically, for example, once a day, air samples are taken inside the container and the composition of gases emitted by potatoes is analyzed, the amount of ethanol, acetone and methyl ethyl ketone is determined using gas chromatography. Along with a number of samples to be analyzed, a reference sample is taken from the same batch of potatoes - tubers with no signs of damage or illness, as well as a sample of completely affected tubers. These samples are also placed in containers and the composition of the evolved gases is determined. According to the results of measuring the composition of the gas phase in the initial period prior to the start of intensive gas release, the quality of a batch of potatoes, i.e., the depth and extent of damage to tubers, is judged by the magnitude of the time before the start of intensive gas release, a possible storage time is predicted. The degree of damage C and the depth of damage G is determined by the measured contents in the gas phase of ethanol, acetone and methyl ethyl ketone.

где К, К, - концентрации этанола соответственно в пробе анализируемой партии, пробе из партии полностью здорового и полностью пораженного картофел ; К au+мэк, K IH-MJK, - суммарные концентрации ,1+м кацетона и метилэтилкетона в пробе из анализируемой партии, пробе из партии полностью здорового и полностью пораженного картофел .where K, K, are the concentrations of ethanol, respectively, in the sample of the batch being analyzed, the sample from the batch of a completely healthy and completely affected potato; K au + mek, K IH-MJK, - total concentrations, 1 + m of cacetone and methyl ethyl ketone in a sample from the analyzed batch, a sample from the batch of a completely healthy and fully affected potato.
Analyze two batches of potatoes before laying them in storage. For this, gassing is determined for medium samples of potatoes of each batch, as well as for specially selected samples of completely healthy and completely affected (rotten) potatoes. Measurements are taken daily for 4 days, the results are averaged. The intensity of ethanol release in healthy potato samples is 30 srvc. units, completely affected potatoes 5105, average sample of batch 1-100, average sample of batch P 17400. The release rate of acetone and methyl ethyl ketone (in total) is respectively 90; 1-U5, 110 and 140. From these data, the degree of damage C and the depth of damage G are calculated using the formulas.
(0,01%)Thus, the first batch of potatoes has a low degree of damage (0.01%)
Визуальный осмотр показывает наличие среди картофел and low depth of damage (0.02%). The second batch of potatoes with a low lesion depth (0.05%) has a greater degree of damage (3.5%). Visual inspection reveals the presence of potatoes
0 the first batch of a small number of heavily affected tubers, due to which the release of acetone and methyl ethyl ketone. After removal of the affected tubers, this batch is stored for storage, since its degree of damage is small. Further measurements of the gas release of potatoes of the first batch show the beginning of intensive ethanol release only after 10 days and then the release of acetone and methyl ethyl ketone begins. After being stored, this batch of potatoes is stored without spoilage 5 months prior to its sale.
При измерении газовыделени второй партии картофел наблюдаетс непрерывный рост выделени этанола, что свидетельствует об увеличении степени поражени ,When measuring the gas evolution of the second batch of potatoes, a continuous increase in ethanol release is observed, which indicates an increase in the degree of damage,
5 and after 10 days of storage, an intensive release of acetone and methyl ethyl ketone is increased, indicating that the infection has penetrated inside. Potatoes of this batch must be sold.
