Целью изобретени вл етс повышение интенсивности процесса сушки. Солодовый экстракт концентрируют в вакуум-аппарате до содержани сухих веществ 70-80%, вспенивают при 25-35°С в пеногенераторе ротационного типа с принудительной подачей азота или воздуха до плотности 600-800 кг/м3, высушивают и охлаждают кондуктивным методом в вальцеленточной сушилке при толщине сло 1-1,5 мм, сушат в течение 3-5 мин при давлении пара в вальцах 1,5-2 атн, а охлаждают до 20-25°С. 1 ил. 1 табл.The invention relates to a technology and technique for producing dry food products and can be used in the brewing and food concentrates industry. Способ получени сухого солодового экстракта состоит в том, что солодовый экстракт с содержанием сухих веществ 12% поступает в вакучм-аппарат 1, где концентрируетс до содержани сухих веществ 70-80%. Концентрированный экстракт поршневым насосом-дозатором подаетс в пеногенератор 2, снабженный охлаждающей рубашкой. Вспенивание осуществл етс до плотности 600-800 кг/м 1 при подаче в камеру пеногенератора сжатого азота или воздуха, расход которого регулируетс регул тором расхода. При вспенивании производитс охлаждение продукта до 25 - 35СС путем подачи в рубашку пеногенератора лед ной воды. В пеногенераторе продукт взбиваетс в стойкую мелкодисперсную пену, котора затем поступает на сушку в валь,- целенточную пеносушильную установку 3. Пена ровным тонким слоем наноситс на бесконечную нержавеющую ленту, огибающую два обогреваемых паром вальца, направл ющие ролики и охлаждающий валец. Давление пара в вальцах составл ет 1,5-2,0 атм. Продукт, высушенный за врем контакта ленты с поверхностью греющих вальцов, далее охлаждаетс до 20-25°С при прохождении ленты по поверхности охлаждающего вальца и приобретает хрупкую структуру, что позвол ет сн ть его ножевым устройством.
