Свекловичный сок, добытый по любому существующему способу, очищенный или неочищенный, подвергаетс  сгущению путем выпаривани  из него воды. Сгущенный до концентрации сиропа сок со значительной щелочной реакцией, сообщаемой ему соответствующим добавлением извести, сливаетс  в резервуары и подвергаетс  замораживанию с помощью применени  искусственного холода , понима  под этим охлаждение сиропа до температуры ниже 0° С, при которой жизнеде тельность вс кого рода микроорганизмов приостанавливаетс .
