(57)Изобретение относитс к консервной промьшшенности. Цель изобретени - повышение качества сока. Дробление винограда и отжим мезги производ т в присутствии диоксида углерода из расчета 1-2 г/кг. Полученное сусло охлаждают до Ю-12° С и отстаивают в течение 10-20 ч, затем доохлаждают до температуры от -2 до -3°С, насыщают диоксидом углерода из расчета 2-3 г/ /дал и выдерживают на осадке в течение 2-5 сут, после чего осветленное сусло снимают с осадка, нагревают до 85-97 С под защитой двуокиси углерода , производ т оклейку бентонитом в количестве 20-40 г/дал при этой температуре , при этом перемешивание производ т барботажем диоксида углерода. Через 10-12 ч осветленный розливо- стойкий сок с температурой 70-80 С снимают с осадка, подают через нижний сливной патрубок в эмалированную емкость, предварительно заполненную диоксидом углерода, и оставл ют на длительное хранение при температурах не ниже -2 С под избыточным давлением 0,13-0,15 МПа. 1 табл .(57) The invention relates to the canning industry. Затем его доохлаж- дают до -2 - -3°С, насьщают диоксидом углерода из расчета 2-3 г/дал и выдерживают на осадке в течение 2- 5 сут, после чего осветленный сок снимают с осадка, нагревают до 85- 97 С под защитой диоксида углерода, производ т оклейку бентонитом в коли честве 20-40 г/дал. При зтом перемешивание осуществл ют барботажем диоксида/ углерода.
