Причем капусту загружают в емкость с определенной степенью уплотнения, для чего используют энергию воздушной струи. Наибольшее влияние на степень уплотне’ ния капусты в заполняемой емкости оказывают скорость воздушного потока и концентрация в нем шинкованной капусты. Подбором этих параметров добиваются требуемой степени уплотнения. Скорость воздушного потока должна быть не менее 25 м/с. При ее уменьшении наряду со снижением плотности укладки возможно осаждение капусты в подводящем трубопроводе. Максимально допустимая скорость потока 35 м/с, при превышении которой происходит раздувание капусты по уже уложенному слою, а также ее дополнительное измельчение. Наличие скоростного интервала 25-35 м/с позволяет обходиться при работе без каких-либо дополнительных регулировок скорости потока, использовав для создания воздушного потока нагнетатель широкого применения (вентилятор, воздуходувку) .
