О 9) Изобретение относитс к пищевой промышленности и микробиологическом синтезу и представл ет собой новый штамм, используемый дл приготовлени сушеных хлебопекарньтх дрожжей Одним из средств увеличени вьпсо да дрожжей в процентах на перерабат ваемое сырье (мелассу) и улучшени их качества вл етс применение чис тых культур дрожжей, соответствующи по своим биологическим особенност м составу питательной среды и услови производства. Культуры дрожжей, примен емые в дрожжевом производстве, должны хоро шо адаптироватьс к особенност м сырь (свеклосахарной мелассы), которые мен ютс в зависимости от сез на сахароварени , технологического процесса производства сахара, а так к услови м технологического процесса в дрожжевом производстве. Необхо дима устойчивость культуры к высоки концентраци м веществ в среде и к высушиванию. Культуры дрожжей дл производства хлебопекарных дрожжей должны о ладать повышенной продуктивностью, высокой ферментативной активностью (хорошей подъемной силой) и т.д., по сравнению с примен емыми в ni oизводстве культурами дрожжей. В насто щее врем в производстве хлебопекарных дрожжей широко примен ютс различные штаммы дрожжей Saccharomyces cerevisiae и среди них наиболее распространенной вл етс производственна раса № t4, обладающа хорошими хлебопекарными свойствами ij . . Однако эта раса обладает сравнительно слабой мальтазной активность более низкой генеративной активностью (продуктивностью) и слабой /Устойчивостью ПРИ высушивании. Цель изобретени - штамм дрожжей отвечающий всем требовани м производства хлебопекарных дрожжей, т.е. обладающий высокой продуктивностью выходом Ьио1:{ассьг,в1исокой ферментатив ной-активностью, и более устойчивый при высушивании по сравнению с производственной расой № f4. Полученный штамм дрожжей Saccharoniyces cerevisiae № 616 имеет следующую морфологическую и физиологическую характеристики. Величина клеток в односуточной культуре на солодовом сусле Юл с.в. - 9507,9 мкм (средн ), форма клеток: преобладает почти кругла , реже йцевидна или слегка удлиненна . Размножение почкованием. Хорошо спорулирует на ацетатной среде. Споры от 2 до 4-х в аске. Форма спор кругла с гладкой оболочкой , размеры 2,,2 мкм. Колонии на мелассовом агаре, через 96 ч роста - круглые, диаметр 4,8 - 6,0 мм, край ровный, более темный, чем середина,, середина сферически выпукла , цвета .светлый беж. На сусло-агаре (через 96 ч) колонии круглые, светло-желтого цвета с ровным краем, середина сферически выпукла , диаметр колонии 6-7 мм. Дрожжи сбраживают rjnoKoay, фруктозу , сахарозу, мальтозу, раффинозу, галактозу. Желатину не разжижают, глицерин и спирт (этанол) усваивают. Не усваивают маннит, дульцит и сорбит . Гибридный штамм № 616 -триплоидный гибрид, при получении которого исполь- зовалась производственна раса, относ ща с к виду Saccharomyces cerevisiae: италь нска раса № 166-И диплоид и ad, (аденин-зависимый мутант) - гаплоид. Гибридный триплоидньй штамм № 616 получен путем скрещивани штамма дрожжей вида ЗассЬаготзсез cerevisiae АДУ-166 и штамма аёеу.;,5(аденинзависимого мутанта), полученного из одной споры, выделенной с помощью микроманипул тора . Гибридизаци в данном случае была возможна потому, что у спорулирзпощих дро окей есть половой процесс. При наличии у скрег иваемых штаммов генов, обозначенных типами спаривани а и et , клетки штаммов в смешанной культуре копулируют, в результате чего образуетс гибридна зигота.
