Zmesné múky sa produkujú z rôznych dôvodov, väčšinou kvôli tomu, aby sa zvýšila ich výživová hodnota alebo zlepšili ich technologické vlastnosti. Do takýchto zmesných múk sa môžu použiť rôzne vedľajšie výrobné produkty potravinárskeho priemyslu s cieľom zvýšiť obsah vlákniny alebo bielkovín, čo okrem toho môže mať za následok aj zníženie nákladov na výrobu a zníženie záťaže na životné prostredie.Mixed flours are produced for various reasons, mostly to increase their nutritional value or improve their technological properties. Zemiakové vločky sa do zmesných múk pridávajú väčšinou ako náhrada klasických zemiakov, čím prispievajú k zlepšeniu viacerých technologických vlastností pekárskych výrobkov, najmä zjemneniu štruktúry výrobku a predĺženiu jeho trvanlivosti (Ezekiel, R., Singh, N.: Use of Potato Flour in Bread and Flat Bread. Brewer's wort can be added to mixed flours as a by-product of the brewing industry, but at the same time, brewer's wort helps to improve several technological and sensory properties of bakery products and also to increase the content of nutritionally valuable substances, especially fiber and protein.
Pivovarnícke mláto je hlavný vedľajší výrobný zvyšok pri produkcii piva, pričom ročne sa ho celosvetovo vyprodukuje približne 39 miliónov ton (Birsan, R. I. a kol.: Recovery of Polyphenols from Brewer's Spent Grains. Antioxidants, 8 (9), 2019, p. 380). Mláto vzniká po ukončení procesu rmutovania, keď sa ako použitý slad oddelí od získanej sladiny, ktorá vstupuje do ďalších procesov varenia piva. Surové mláto je vďaka vysokému obsahu vody a látok využiteľných pre mikroorganizmy pomerne nestabilné, preto je potrebné čo najskôr po jeho získaní znížiť jeho vlhkosť. Pivovarnícke mláto pozostáva najmä z obalových vrstiev a pliev pôvodného jačmenného zrna. Z chemického hľadiska má mláto vysokú výživovú hodnotu, najmä vďaka vysokému obsahu vlákniny a bielkovín. Vláknina je zastúpená najmä lignínom, celulózou a hemicelulózami. Obsah lignínu sa pohybuje v rozmedzí od 15 % do 25 % sušiny, celulóza a hemicelulózy tvoria spolu 30 až 50 % sušiny mláta. Obsah bielkovín je pohyblivý v závislosti od použitej technológie varenia piva od 10 % do 30 % sušiny. The brewer's mash consists mainly of packaging layers and chaff of the original barley grain. From a chemical point of view, millet has a high nutritional value, mainly due to its high fiber and protein content. Fiber is mainly represented by lignin, cellulose and hemicelluloses. The content of lignin ranges from 15% to 25% of the dry matter, cellulose and hemicelluloses make up 30 to 50% of the dry matter of threshing. The protein content is variable, depending on the brewing technology used, from 10% to 30% of dry matter. Pivovarnícke mláto má pomerne vysoké možnosti uplatnenia v nepotravinárskej aj potravinárskej oblasti. Najčastejšie sa využíva v krmivárstve, okrem toho je možné ho použiť na výrobu papiera, získavanie energie, produkciu bioplynu a etanolu alebo pri čistení odpadových vôd a podobne. V potravinárstve sa okrem jeho zakomponovania do zmesných múk a cereálnych výrobkov môže aplikovať napríklad aj do párkov (Mussatto, S. Príprava zmesných múk s vylepšenými vlastnosťami použitím pšeničnej múky, sušených zemiakových vločiek a upraveného pivovarníckeho mláta nie je v patentovej literatúre opísaná. V patente CN 112137016A je opísaná príprava pšenično-zemiakovej múky s prídavkom ďalších zložiek s ohľadom na celkovú technologickú kvalitu. V patente CS 226595B1 z roku 1979 je opísaná príprava pekárskych výrobkov s použitím neupraveného pivovarníckeho mláta. Úprava mláta mechanickým rozpojením jeho častí a následné jeho použitie pri výrobe doplnkovej potraviny (sušienok, tyčiniek alebo krekrov) s vysokým obsahom vlákniny je opísaná v patente CZ 2016247A3. V patente US 20190223457A1 je opísaná úprava mláta sušením a mrazením a jeho následné aplikovanie do pekárskych výrobkov. Zmesná múka sa pripraví zmiešaním 75 až 95 % (hmotn.) pšeničnej múky, 1 až 10 % (hmotn.) sušených zemiakových vločiek a 1 až 15 % (hmotn.) upraveného pivovarníckeho mláta.Mixed flour is prepared by mixing 75 to 95% (wt.) wheat flour, 1 to 10% (wt.) dried potato flakes and 1 to 15% (wt.) treated brewer's grist.
Pivovarnícke mláto sa upraví tak, že mokré pivovarnícke mláto sa usuší pri teplotách od 50 do 250 °C na výsledný obsah vlhkosti 2 až 6 % (hmotn.) a následne sa pomelie. Mláto môže byť ďalej upravené separáciou častíc rôznych veľkostí, čím múka získa špecifické vlastnosti vhodné pre určitý typ výrobkov.The brewer's mash is prepared by drying the wet brewer's mash at temperatures from 50 to 250 °C to a final moisture content of 2 to 6% (by weight) and then grinding it.
