The technical solution falls into the field of highly functional foods intended for the needs of the 45+ age category.

Current state of the art

Snacks with protein content are especially sought after by consumers with an active lifestyle. Consumers use them to supplement proteins that ensure muscle growth. In addition, these snacks can be enriched with other ingredients that have important metabolic functions in the body.

Collagen preparations are designed to restore cartilage, tendons and ligaments and also improve skin elasticity. There are many nutritional supplements available on the market containing collagen of various types intended for various purposes and for various age groups.

Active nutrition is aimed at a group of consumers who care about their health and are generally targeted at the so-called well being - harmony. This category of consumers also includes the aging population, which due to physiological changes in the body is exposed to changes that adversely affect the health and well-being of the body, such as loss of muscle mass, loss of skin elasticity, wear of cartilage and others.

From the current state of the art, mainly bars containing proteins of various types and origin, whether animal or vegetable, which are primarily intended to support the growth and building of muscles, and then separately bars containing collagen of various types are known.

But it is not known that available products have in their composition a combination of plant and animal proteins with a mixture of vitamins, which contains vitamin C that supports the formation of collagen, which is part of cartilage and connective tissues.

The essence of the technical solution

The shortcomings of the current state of the art are eliminated by the newly developed product, which differs from existing formulas by the mutual combination of various animal and plant protein sources, hydrolyzed collagen and a vitamin mixture (vitamin premix), while the vitamin premix contains vitamin C, vitamin E, niacin, pantothenic acid, vitamin B6 , vitamin B12, vitamin B1, folic acid, biotin, vitamin B12.

Functional snack-protein bar - may also contain other additives such as flavorings, sweeteners, aromas, fiber, salt.

The essence of the presented technical solution is a protein bar that contains 17.7 to 28.8 wt. % chicory fiber in the form of syrup, 12.65 to 20.55 wt. % glaze, 10.5 to 17.1 wt. % maltitol syrup, 7.6 to 12.5 wt. % of whey protein concentrate, 7.2 to 11.8 wt. % soy protein, 4.9 to 8.0 wt. % of hydrolyzed collagen, 4 to 6.5 wt. % soy extrudate, 2.7 to 4.4 wt. % humectant, 2.7 - 4.4 wt. % casein, 1.82 to 2.86 wt. % milk powder, 0.11 to 0.14 wt. % vitamin premix and other additives such as aromas, salt, emulsifiers and thickeners and others.

The aging population aged 45 and over is exposed to the risk of sarcopenia - loss of muscle and strength, reduction of skin elasticity as well as wear and tear of cartilage. There are no known food products on the market targeting the aging population to limit muscle loss and improve musculoskeletal health.

The advantage of the protein bar according to the technical solution lies mainly in the composition, which respects the needs of the aging population aged 45+, and which provides for the specific needs of consumers of this age group, which include increasing the production of proteins, improving the health of the joints, and supporting the preservation of skin elasticity.

The mutual combination of animal and vegetable proteins with hydrolyzed collagen and the addition of vitamin C according to the mentioned technical solution leads to the support of the formation of proteosynthesis and body collagen in the body.
