Abstract

A temperature sensor (11) connected to a control means is arranged after a holding section (10). Pressure sensors (17, 17') are arranged at the product inlet to a first regenerative section (5) and on the downstream side of the same regenerative. A constant-pressure valve (15) and a second diversion valve (16) are arranged downstream of a cooling section (4). A conduit (21) for return of the liquid food product is arranged between a first diversion valve (12) and an outlet pipeline from the cooling section (4). If erroneous pressure values or too low a temperature are recorded the control unit actuates the first diversion valve (12) to move to its second position in which the food product is returned to the inlet of a pasteurizer. A pressure increasing means (13) forces the amount of heat treated product present in a regenerative (5, 6) and cooling section (4) to circulate in a circulation path on the downstream side of the pasteurizer (3) in such a way that the pressure of this amount of heat treated food product is maintained.
