Abstract
The wheat is first ground up and the bran removed. Gluten and starch (A and B) are separated. The gluten is washed and filtered. Starches A and B are washed and fractionated. Process water from the latter stage and gluten washing is paned through a reverse osmosis unit to recover the foam stable proteins. The process water is recirculated for the gluten separation stage. The proteins which are removed by reverse osmosis have a molecular weight of over 10,000.
