Abstract

In a convection oven having an oven chamber (13) and side compartments (20A, 20B) on opposite sides of the oven chamber which side compartments are separated from the oven chamber by perforated side walls (16) and form part of a circulation channel system with fans (22) for circulating air generally horizontally in a closed path comprising the oven chamber (13) and the side compartments (20A, 20B), the perforations of each side wall (16) take the form of slots (17) inclined upwardly and in the direction of flow of the air flowing in the associated side compartment to impart a vertical component of movement to the air flow passing from the side compartment (20A, 20B) through the slots (17) into the oven chamber (13).
