Abstract

1529372 Filamentary proteinaceous food SOC DES PRODUITS NESTLE SA 13 Jan 1976 [12 Feb 1975] 01174/76 Heading C3H A process for producing filaments comprises preparing an alkaline solution containing proteins which is a mixture of (1) proteins of vegetable origin and (2) proteins from whey and containing up to 50% of proteins from whey, and passing the solution thus prepared through spinnerets into an acid coagulation bath to form proteinie filaments therein. The vegetable protein source applies to extracts poor in sulphur-containing amino acids, e.g. soya, sunflower, ground nuts, cow peas, maize and horse beans. The coagulation may be effected by food grade hydrochloric, phosphoric, citric, acetic or lactic acids. The resulting filaments are edible.
