Изобретение относится к пищевой промышленности, в частности к способу производства углеводно-белкового модуля для продуктов детского питания из растительного сырья. Целью изобретения является повышение пищевой и биологической ценности продукта путем расщепления крахмала муки до моно-, ди - и полисахаров, обладающих низкой осмолярностью. В способе получения углеводно-белковых модулей для детского питания из муки злаковых культур, предусматривают разведение муки водой, ферментативный гидролиз и сушку. Новым в способе является то, что ферментативный гидролиз проводят с помощью амилосубтилина Г10Х из расчета 0,8-1,0 единиц на 1 кг крахмала муки при 83-85°С в течение 1 ч, после чего подвергают термообработке при 120-130°С и давлении 0,2-0,3 МПа в течение 5 мин, охлаждают, затем проводят декстринизацию гидролизата с помощью амилосубтилина Г10Х из расчета 0,5-0,7 единиц на 1 кг крахмала муки при 70-85oС в течение 5-8 ч до содержания редуцирующих веществ 24-30%, после чего осуществляют инактивацию фермента.The invention relates to the food industry, in particular to a method for the production of carbohydrate-protein module for baby food from vegetable raw materials.
