Поставленная задача достигается тем, что в предлагаемом способе производства экструдированной комбинированной добавки из амаранта, включающий просеивание зерен амаранта, увлажнение, экструдирование, новым является то, что в начале зерна амаранта подвергают шелушению для очистки от жесткой оболочки, затем обжаривают при температуре 200°С в течение 20 с и просеивают на сите с размером круглых отверстий 0,8 мм, далее смешивают целые обжаренные и взорванные зерна амаранта в пропорции 1 : 2, подвергают влаготепловой обработке паром под давлением 0,25 МПа в течение 4 мин до влажности 22-24 % и осуществляют обработку полученной смеси в четырехзонном шнековом экструдере при температуре продукта: в I зоне - 38°С, в II зоне - 99-100°С, в III зоне - 175°С, в IV зоне - 205°С, частоте вращения шнека - 33,9 с-1 и давлении в предматричной зоне экструдера - 0,35 МПа, на полученные экструдированные палочки при перемешивании в вакууме наносят методом распыления белково-витаминно-липидный комплекс. Для оценки качественных характеристик амарантных палочек были исследованы следующие их физико-химические свойства: набухаемость (водопоглотительная способность), растворимость и водоудерживающая способность. Эти важные показатели, демонстрирующие возможность экструдата связывать воду и растворяться в ней, характеризуют его углеводный состав, а также потребительские свойства и частично усвояемость продукта.To assess the qualitative characteristics of amaranth sticks, their following physicochemical properties were studied: swelling (water absorption capacity), solubility and water-holding capacity.
