Катехины являются природными веществами, содержатся в растениях, особенно чайных, виноградной лозе, в какао-бобах. Катехины — бесцветные кристаллы с вяжущим вкусом, хорошо растворяются в воде, метаноле и этаноле, окрашиваются спиртовым раствором хлорида железа в зеленый цвет. Катехины относятся к группе флавона. Молекула катехинов содержит два асимметрических атома углерода; для каждого катехина известны 4 оптически активных изомера и 2 рацемата. Катехины можно разделить и извлечь влажным диэтиловым эфиром или смесью уксусноэтилового эфира с четыреххлористым углеродом. Катехины получают из растительного сырья, возможен синтез. Являются биологически высокоактивными веществами, они регулируют проницаемость кровеносных капилляров и увеличивают упругость их стенок, способствуют лучшему усвоению организмами аскорбиновой кислоты.Catechins are natural substances found in plants, especially tea plants, vines, and cocoa beans. They are biologically highly active substances, they regulate the permeability of blood capillaries and increase the elasticity of their walls, contribute to better assimilation of ascorbic acid by organisms.

Наиболее распространенный флавонол, обнаруженный в какао, – эпикатехин. Он быстро абсорбируется и уже через 30 минут после употребления выявляется в плазме крови. Через 2–3 часа уровень эпикатехина достигает максимального значения и демонстрирует устойчивую положительную корреляцию с количеством съеденного шоколада. Экспериментальные данные показали, что мономерные ((–)эпикатехин и (+)эпикатехин) и димерные флавонолы снижают активизацию NF-jB, приводя, таким образом, к уменьшению оксидативного стресса и синтеза IL2. Также есть обоснованные данные, что флавонолы какао защищают ЛПНП от окисления.Cocoa contains monomeric primary polyphenols (isomers of (-) epicatechin and (+) epicatechin), as well as oligomeric and polymeric flavonols. Ферментированные какао-бобы подвергают обжариванию в горячем потоке воздуха при температуре 115°С до снижения их влажности до 2%, резкому охлаждению до 35°С и дроблению при одновременном отделении шелухи с получением какао-крупки. После проводят измельчение какао-крупки на меланжерах с низкотемпературным режимом при температуре 40°С в течение 48 часов с получением какао тертого. Используют 100 мас.% какао тертого. Далее осуществляют измельчение на вальцевых установках до размера частиц 35 мкм без дополнительного подогрева с получением предварительно измельченной шоколадной массы. В массу добавляют измельченный астаксантин, полученный из зеленой микроводоросли Haematococcus pluvialis, в соотношении предварительно измельченная шоколадная масса 5 г : астаксантин 3,5 мг. Полученную массу коншируют в меланжере при температуре 45°С в течение 24 часов, затем шоколадную массу темперируют, при понижении температуры до 32°С происходит кристаллизация какао-масла и одновременное заключение эпикатехина в мицеллы астаксантина. Подтверждение эффективности и биодоступности катехинов и эпикатехинов при использовании шоколада было получено в ходе проведенного исследования. Все пациенты участвовали в исследовании добровольно с подписанием формы добровольного информированного согласия. Добровольцев разделили на две группы: опытная группа принимала шоколад, полученного по заявленной технологии, а контрольная группа принимала шоколад, по наиболее близкому аналогу US 10849336 B2, 01.12.2020. В течение 21 дня добровольцы (опытная и контрольная группы) употребляли шоколад по 5 г в день. Динамика общей концентрации эпикатехина в сыворотке пациентов, полученная в ходе перекрестного исследования полученная перед приемом шоклолада и через 21 сутки после употребления в течение каждого дня по 5 г шоколад.
