Высокочастотная кавитационная обработка жидких пищевых сред влияет на растворяющую способность воды по отношению к хлориду натрия. Содержание хлорида натрия в рассоле 2%-ной концентрации поваренной соли, который подвергался высокочастотной кавитационной обработке, на 23% выше по сравнению с нативным рассолом заданной концентрации без обработки.
