Abstract
Description
The invention relates to the fat-and-oil industry for the production of blends of functional vegetable oils for pregnant women.
The closest in technical essence and the achieved effect are balanced blends of unrefined vegetable oils for omega-6 and omega-3 PUFAs (polyunsaturated fatty acids) [US Pat. 2695156 C1 RF, IPC A23D 9/00 Balanced blends of unrefined vegetable oils for omega-6 and omega-3 PUFAs (polyunsaturated fatty acids) / E.Yu. Wolf, V.N. Strizhevskaya, I.V. Simakova, F.V. Pertsev, L.Z. Shilman, N.V. Kamsulina, V.M. Kozyreva, E.A. Karagulova; applicant and patent holder Healthy Nutrition LLC (RU). - No. 2018140765, application. 11/19/2018; publ. 07/22/2019, Bull. No. 21]. According to this, blends of unrefined vegetable oils contain the following oils - safflower, camelina and milk thistle, in which the content of polyunsaturated fatty acids omega-3 and omega-6 has a ratio of 1:10. The first blend contains safflower oil - 50 wt. %, camelina oil - 13.5 wt. % and milk thistle oil - 36.5 wt. %. The second blend is characterized by the content of components in the amount of 65 wt. %, 10 wt. %, 25 wt. %. In the third blend, the ratio of omega-3 and omega-6 is 1:5 with the following oil content: safflower - 30 wt. %, milk thistle - 11 wt. %, mustard - 59 wt. %) and get the finished product.
The disadvantages of the method are: these blends are made without taking into account such an important component as polyunsaturated fatty acid omega-9; the content of polyunsaturated fatty acids omega-3 and omega-6 in the proposed ratio of 1:10 is not fully adapted to the needs of the body of pregnant women.
The technical objective of the invention is to obtain a four-component blend of vegetable oils for pregnant women by optimizing the fatty acid composition and selecting the ratio of omega-3, omega-6 and omega-9 fatty acids with improved energy and nutritional value of the finished product, which is most adapted to the needs of the body of pregnant women .
The set technical task of the invention is achieved by the fact that in the method for producing a blend of vegetable oils for pregnant women, characterized in that a mixture of vegetable oils of sunflower, rapeseed, milk thistle and camelina, taken in a ratio of 15:20:13:52, is used to obtain a blend, in which the ratio of omega-3 fatty acids: omega-6: omega-9 = 1: 1.5: 1.3 is achieved to obtain which the seeds are pre-cleaned of impurities, subjected to heat and moisture treatment, then the seeds are sent for pre-pressing at a temperature of 50-60 ° C , then the pressed oil is subjected to purification, filtration, all the obtained components of the blend of vegetable oils, namely: sunflower, rapeseed, milk thistle and camelina, are dosed in portions, heated to a temperature of 35-40 ° C and mixed, then the oil goes to deodorization and refining and then for bottling, and during bottling, preliminary nitriding of a blend of vegetable oils is used.
EFFECT: invention allows to create a product with a balanced ratio of omega-3, omega-6 and omega-9 polyunsaturated fatty acids, with improved energy and nutritional value of the finished product, aimed at pregnant women.
The technical result consists in the development of formulations of blended vegetable oils obtained by cold pressing and balanced in composition of polyunsaturated fatty acids omega-3:omega-6:omega-9=1:1.5:1.3 with improved energy and nutritional value of the finished product for pregnant women for the purpose of dietary preventive nutrition.
Oilseeds such as sunflower, rapeseed, milk thistle and camelina are used to produce oils and blend components are modeled based on them. Applicable oils should be fresh, inexpensive and readily available, and with improved energy and nutritional value.
A method for the production of blends of vegetable oils for pregnant women is carried out as follows.
8%.Oilseeds (sunflower, rapeseed, milk thistle and camelina) are cleaned of weeds and dried with a hot heat carrier to a final moisture content of 8%.
Then peeled and dried oilseeds (sunflower, rapeseed, milk thistle and camelina) are subjected to heat and moisture treatment.
Next, the seeds of each crop are separately supplied for pressing at a temperature of not more than 60°C.
The choice of processing temperature of 60°C is justified by the fact that at higher temperatures, for example, 70°C, the quality indicators of oils deteriorate, and at lower temperatures, for example, 50°C, oil yield sharply decreases due to a decrease in viscosity. At temperatures up to 60 ° C, cold pressing is carried out, which includes cleaning the seeds, grinding and extracting oil from the seed. The oil turns out to be perishable, but retains all the beneficial properties of the plant product: tocopherols, polyunsaturated and monounsaturated fatty acids, phytosterols and other useful substances. Then the pressed oil is subjected to purification, filtration.
All the obtained components of the blend of vegetable oils (sunflower, rapeseed, milk thistle and camelina) are dosed in portions, heated to a temperature of 35-40 ° C and mixed in a ratio of 15:20:13:52, at which the ratio of fatty acids omega-3: omega- 6:omega-9=1:1.5:1.3. After mixing vegetable oils, the blend is deodorized and refined. The resulting blends of vegetable oils are packaged, after bubbling with nitrogen.
Generic 2.0.This ratio was obtained using the Generic 2.0 software package.
При выборе рецептурного состава смеси учитывали ряд факторов: повышенное содержание полиненасыщенных жирных кислот класса омега-3, омега-6 и омега-9, мононенасыщенных и полиненасыщенных жирных кислот, адекватный уровень поступления в организм токоферолов (таблица 1).When choosing the recipe composition of the mixture, a number of factors were taken into account: an increased content of polyunsaturated fatty acids of the omega-3, omega-6 and omega-9 classes, monounsaturated and polyunsaturated fatty acids, an adequate level of intake of tocopherols into the body (table 1).
2000. №4. С.27-30].Milk thistle oil has strong therapeutic and prophylactic properties and is widely used in the treatment of many diseases, as well as to improve immunity. The fatty acid composition of the oil includes unsaturated fatty acids - linoleic (up to 35%), oleic (up to 26%) and others, as well as saturated fatty acids - stearic (up to 12%), Page: 4 RU 2695156 C1 51015202530354045 palmitic (up to 10%) , arachidic (up to 7%) and behenic (up to 4%) and others. An important role in the composition of the oil is played by milk thistle extract - flavolignan (silymarin). This substance contributes to the restoration of liver functions, including increasing the protective ability of liver cells from the penetration of toxic substances [Sokolskaya T.A. / Complex processing of fruits of milk thistle and the creation of the drug "Silimar" on its basis // Chemical-pharmaceutical journal. 2000. 17.12.2002].According to the results of clinical trials, camelina oil is recommended by the State Research Institute of Nutrition of the Russian Academy of Medical Sciences for the dietary nutrition of patients who have cardiovascular diseases [conclusion of the GIC IP RAMS No. 72 / e-9612 / and-02 of 12/17/2002].
Н. Н. Н. В. Widespread use of camelina oil is also observed in therapeutic and preventive nutrition in the treatment of diseases of the gastrointestinal tract and vegetarian nutrition. Camelina oil has a wide range of therapeutic effects, due to the fact that it has bactericidal, anti-inflammatory, antitumor, wound healing, antihelminthic properties. Unrefined camelina oil is characterized by the content of a large amount of natural antioxidants, in particular vitamin E (40-120 mg%), which makes it resistant to oxidation processes. Pro-vitamin A, which is part of camelina oil, as well as vitamin E, is necessary for proper embryonic development, for the full development of a growing child's body and its effective protection. Camelina oil contains up to 90% polyunsaturated fatty acids, of which omega - 3 acids - about 38%, omega - 6 - up to 18%. In addition, camelina oil is considered an analogue of vitamin F, which, as you know, cannot be synthesized independently in the tissues of the body, and therefore is necessary for life [New in the technology of blending vegetable oils / A.N. Ostrikov, V.N. Vasilenko, L.N. Frolova, M.V. Kopylov. Voronezh, Mrs. un-t engineer tech., 2013. 225 p.].
