Известен способ получения среды для выращивания пробиотических микроорганизмов на основе печеночного настоя. После охлаждения фильтруют через ватно-марлевый фильтр и устанавливают рН - 6,8. Среду стерилизуют автоклавированием при 1 атм 30 минут. Наша задача решается тем, что на стадии приготовления ростовой среды в воду, помимо соевого гидролизата и пептона, вносится нанофильтрат творожной сыворотки, содержащий лактулозу в массовой доле 70% в сухом веществе. Технология производства нанофильтрата творожной сыворотки защищена патентом RU 2617940 (владелец ФГБОУ ВО Вологодская ГМХА) (RU)). Нанофильтрат вносится в количестве 3% от объёма подготавливаемой питательной среды. Лактулоза обладает одним из самых высоких пребиотических индексов, кроме того попадая в организм она не расщепляется в верхних отделах желудочно-кишечного тракта, переходит в толстый кишечник, выполняя роль пребиотика. Для ее приготовления к фильтрованной воды добавляют 1 г пептона, 120 мл соевого гидролизата, 30 мл нанофильтрата творожной сыворотки и 2 г агар-агара микробиологического. Смесь нагревают до кипения. После охлаждения фильтруют через бумажный фильтр и устанавливают рН - 6,8 – 7,0. Среду стерилизуют автоклавированием при 1 атм 30 минут. Среда готова для использования. В ростовую среду вносят посевной материал, приготовленный на чистых культурах Bifidobacterium thermophilum тп-87 из расчёта соотношения посевного материала и ростовой среды - 1:20. В серии посевов получена конечная концентрация 1,3×107 КОЕ/г. Лактулоза в оптимальной концентрации обеспечивает высокую ростовую продуктивность пробиотической культуры.
