При этом следует отметить, что содержание белка находится в прямой зависимости от количества крови убойных животных или птиц в рецептурах. По содержанию жира эмульсии можно отнести к низкожирным, т.к. этот показатель не превышает 6%. Повышение содержания углеводов в 25 и 26 образцах эмульсий происходит за счет ведения растительных компонентов – порошок корня цикория, нута, жмыха амаранта.
