Известен способ посола рыбы, согласно которому в посольную емкость наливают тузлук плотностью 1,2 г/см3 и загружают рыбу до тех пор, пока тузлук не покроется сплошным слоем рыбы, образуя «мостик». Образовавшийся «мостик» равномерно засыпают солью, затем рыбу укладывают рядами, пересыпая солью. После шприцевания рыбу досаливают, например сухой солью. Досаливание проводят при температуре 10-12°С. Через 48 часов содержание соли в рыбе составляет 5-6,5% (Попов А.В. Поставленная в изобретении задача реализуется за счет того, что первичную обработку сырья проводят анолитом с рН 2,0-2,2, шприцевание рыбы осуществляют насыщенным активированным тузлуком с рН 9,8-10,0, с последующим досаливанием путем погружения рыбы в такой же тузлук, получаемым растворением поваренной соли в католите с рН 11,0-11,2. Предлагаемое техническое решение апробировано в лабораторных условиях. Сущность изобретения заключается в следующем: рыбу размораживают в анолите с рН 2,0-2,2 и температурой не выше 20°С. Соотношение рыба и анолит должно быть 1:2. Размораживание заканчивают при достижении температуры в толще тела рыбы до 0°С. После размораживания рыбу шприцуют насыщенным активированным тузлуком с рН 9,8-10,0, полученным растворением поваренной соли в католите с рН 11,0-11,2. Количество вводимого тузлука составляет 10-20% от массы сырья. Рыбу после шприцевания загружают в посольную емкость и заливают насыщенным активированным тузлуком. Досаливание рыбы в тузлуке проводят при температуре 7°С в течение 13-20 часов. Соотношение рыба: тузлук должно составлять 1:2.The proposed technical solution is tested in laboratory conditions.
