На стадии прямоточного ведения процесса гидролиза-экстрагирования происходит интенсивный гидролиз протопектина за счет присутствия как натизных кислот цитрусовых выжимок, так и кислот, введенных в составе экстракта. Поскольку в цитрусовых плодах и выжимках соответственно содержание кислот изменяется в зависимости от вида, сорта и условий выращивания, достижение необходимой концентрации кислот на стации прямоточного ведения процесса гидролиза-экстрагирования осуществляется известными методами: регулированием соотношения расходов фаз и/или введением в экстракт, отделенный после противоточного экстрагирования, дополнительного количества кислот по результатам измерения значения рН реакционной смеси на входе твердой фазы, что обеспечивает оптимальные условия гидролиза. После завершения прямоточной стадии процесса жидкую фазу отделяют самотеком и отжимом твердой фазы. Концентрация пектина в жидкой фазе выше, чем в наиболее близком аналоге, что в ряде случаев исключает необходимость ее концентрирования, например при использовании целевого продукта в пищевой промышленности при производстве напитков. Твердая фаза, содержащая остатки экстрактивных веществ, поступает на противоточную стадию ведения процесса. The solid phase, containing the remains of extractive substances, enters the countercurrent stage of the process. At this stage, pectin substances that are converted to a soluble state are exposed to acids, the concentration of which decreases during the process, which reduces the possibility of deep hydrolysis of pectin and, accordingly, reduces its loss compared to the closest analogue.
