Набухание может осуществляться до фасовки путем замачивания, и/или бланширования, или после совместной фасовки с заливочной жидкостью в процессе тепловой стерилизации. При набухании до фасовки метод стерилизации не оказывает заметного влияния на качество целевого продукта. При фасовке горошка без предварительного набухания количество воды задают больше рецептурного в расчете на впитываемое при набухании количество, а стерилизацию осуществляют тепловым методом для ускорения набухания, так как в противном случае консервы будет необходимо выдерживать до реализации для обеспечения соответствующего набухания, создающего необходимые органолептические свойства целевого продукта, в течение времени, сравнимого с гарантийным сроком хранения консервов.
