Abstract
Description
The invention relates to a technology for storing food products, including vegetables and fruits, and can be used to increase the shelf life of packaged products for retail trade.
A known method of production, storage and preparation for the sale of food products, mainly vegetables, according to the patent of the Russian Federation N2073468, which includes cleaning, washing, processing with absorbents, antiseptics and inert gas, and then packaging and packaging in containers intended for the sale of the product.
The disadvantage of this method is the limited duration of exposure to the chemical components involved in the processing, after which the product is subjected to microbial spoilage and its long-term storage decreases its organoleptic characteristics of taste and aroma. The same disadvantages have a method of processing vegetables and fruits before storage according to patent EPO 808578 using calcium chloride and polymer hydrocarbon enzymes.
To increase the shelf life of fruits and vegetables allows the method according to US patent N5711211, according to which a multisection container made of a gas-permeable material is inserted into a packaging container having a significant contact area with the product intended for storage. Structurally, the implementation of this method is quite complicated.
The closest in technical essence to the claimed one is a method of preventing food products from spoiling according to PCT patent NZ 99/00068, according to which layers of absorbent and chemically active substance, including an antiseptic, are separated by gas and moisture permeable partitions. Moisture from the bottom of the packaging is absorbed by the absorbent and transferred to a chemically active substance through the separation wall, as a result of which an inert (carbon dioxide) gas is generated, which enters the cavity of the hermetically sealed packaging container with food products through the next wall, where, as a result, the antimicrobial atmosphere is maintained with a certain percentage of air and carbon dioxide. As chemical components, sodium bicarbonate, fumeric acid, iron sulfate, calcium chloride, silicon dioxide, iron powder and some other substances are involved in the implementation of the method. This method has limited functionality, since it requires the use of special packaging containers and, in addition, its greatest effectiveness is limited by the nomenclature of food products, which include meat.
The objective of the invention is to expand the functionality of the method of preventing food spoilage by simplifying the design of packaging containers and the inclusion in the list of stored food products of fruits and vegetables.
This is achieved by the fact that the method of preventing food spoilage using a hermetically sealed gas-tight packaging container with food products, in the cavity of which an antimicrobial atmosphere is maintained using inert gas, an antiseptic and an absorbent, differs in that when packaging food products, they are simultaneously placed in packaging containers containers made of gas-permeable material into which the antiseptic and absorbent are separately placed, then air is removed from the cavity of the packaging container, and ivsheesya space filled with inert gas, whereupon the packing container is sealed.
50%. In this case, nitrogen or carbon dioxide, or a mixture of nitrogen with carbon dioxide, in which nitrogen contains from 50 to 70% and carbon dioxide from 30 to 50%, is used as an inert gas to fill the inner cavity of the packaging container with food products.
As an antiseptic, ascorbic acid or acetylsalicylic acid is used, or a mixture of these acids at a rate of from 0.01 to 20 mg weight per 1 cm 3 of packaging volume.
As the absorbent material, molecular sieves made of silicon and carbon, or a mixture of molecular sieves and activated carbon or calcium chloride and molecular sieves are used at a rate of 1 to 30 mg weight per 1 cm 3 of packaging volume. Molecular sieves are used in the form of granules, which include silicon and carbon.
The presence of an inert gas inside the packaging container, in which antiseptic and absorbent molecules diffuse through the gas-permeable walls of the containers in which they are placed, allows to obtain a stable antimicrobial atmosphere in the cavity of packaging containers with food products, so that the latter do not undergo microbial spoilage and retain their organoleptic properties for a long time indicators.
The implementation of the method is as follows. Containers (small sealed bags of gas-permeable material) with absorbent and antiseptic are put into packaging containers, for example, plastic bags. These containers can be mounted on the inside wall of the bag. After loading food into the bag through its mouth, air is pumped out from the inside, inert gas is pumped into the bag cavity, after which the neck is hermetically closed.
Using the proposed method showed that the products packaged in accordance with it in plastic bags at ambient temperatures from 0 to +6 o C have a shelf life of one to six months.
Examples of specific performance of the method are presented in the table.
