Abstract
Description
The invention relates to a gelling agent, which can be used in the food, perfumery, medical industries, as well as in oil production.
State of the art
Polysaccharides of various structures, with different structure of the elementary unit are well studied and are used as gelling (gluing) reagents.
The most widely used in industry are pectins - straight chain polysaccharides, consisting of residues of D - galacturonic acids, connected by a-1,4 - glycosidic bonds. Polygalacturonic acid calcium salts are used to make fruit jellies / 1 /. Industrial production of pectins includes two-stage fermentation of plant materials using microorganisms containing pectinolytic enzymes - esterase and depolymerase. Subsequently, the pectin solution is centrifuged, the pectins are isolated with methanol or ethanol and then obtained as a dry product. The process is multistage, quite expensive, fire hazard. The release of pectin is regulated by GOST / 2 /.
Agar agar, which is a mixture of agarose and agaropectin, is widely used. The main polysaccharide consists of alternating residues of D - galactose and 3.6-anhydrogalactose, connected in a linear chain by - 1.4 and 1.3 - bonds. Agaropectin contains D - galactose, 3.6 - anhydrogalactose, the corresponding uronic acids and sulfate. The process of obtaining agar-agar under industrial conditions includes basically the same stages as in the case of pectin, however, it is even more complicated and expensive / 1 /.
3, 4/. Agar production is regulated by two GOSTs / 3, 4 /.
Known large-scale production of xanthan - bacterial exopolysaccharide / 5 /. Xanthan has a highly branched block structure, including a cellobiose-like core, to which a side chain consisting of residues of mannose, as well as pyruvic, glucuronic and acetic acids, is attached. The gelling characteristics of xanthan gum appear in a wide range of temperatures and pH values, however, the complexity of its production and cost are comparable to the production and cost of agar.
Alginates having a block structure and including C1-C4, a linear copolymer of b-D-mannuronic acid and its 5-epimer a-L-guluronic acid, have found application in the food industry. Like agar, alginates in several stages are isolated from algae / 6 /.
1,6. A more accessible direction was the processing of plant materials containing starches - potatoes, corn, grains, tapioca, etc. / 7 /. Plant starches consist of two glucans - amylose and amylopectin. The unbranched chains of amylose contain D-glucose residues connected by a-1,4-glycosidic bonds. Amylopectin is also a poly-a-1,4-D-glucose, however, it has 1,6-branched bonds.
The stereochemical structure of amylopectin causes, strictly speaking, the absence of gelling properties in starch. Amylopectin can only form jellies, i.e. a clear effect of syneresis is observed.
However, the availability of starch as a feedstock led to lengthy and numerous work in the direction of creating modifications of starch with certain target properties and, in particular, gelling. It is advisable to distinguish two starch products mastered by the industry.
Phosphate starch / 8 / is a product of the destruction of the shells of starch grains and partial hydrolysis of amylopectin in the presence of phosphoric acid salts. As a result of a change in the stereochemical structure of amylopectin, it was possible to significantly (although not completely) suppress the syneresis and achieve the manifestation of gelation. However, gels have low strength, which is reflected in the use of phosphate starch in the food industry - in the preparation of sauces, pastries, jams.
Gelling starch is also commercially available / 9 /. Its distinctive feature is that, with the help of oxidative reagent treatment, a partial destruction of the grain shell of the initial starch and a change in the stereochemical structure of amylopectin were carried out. This led to a new set of product properties - it is able to form gels, not jellies. Gels have increased transparency. Limitations of the possibilities of using the product are due to its reagent treatment - the color of solutions and gels, low gel strength, which requires an increase in consumption during use.
SUMMARY OF THE INVENTION
The technical problem to which this invention is directed is the creation of a substance (mixture of substances), which at least would not be inferior to the selected prototype in basic properties (primarily in gel strength), would have the ability to vary properties in solving specific problems, would have the field of application characteristic of plant substances (in particular, the range of pH values) would have an available raw material base.
The technical result of solving this problem is a significant expansion of the scope of gelling agents.
The task found a solution in the use of a multicomponent mixture. Amylopectin of starch was taken as the main substance. It is essential that starch grains have an undisturbed shell. Removal of water-soluble amylose, which is an undesirable component, can be carried out by preliminary washing with warm water / 7 /. The shell is used as an element of texturing the mixture when the chemical reagents causing the gelling properties of the composition are spatially arranged on it in the form of a second shell in the immediate vicinity of amylopectin until the moment when amylopectin is released from the first shell by activating heating. The location of the chemical components directly on the shell of the grain allowed to lower the temperature of the onset of activation of the mixture to 58 o C. The activation time can be from several tens of seconds to 15 minutes depending on the origin of starch.
An inorganic polymer complexing agent plays an important role in the gel formation process. Its complex-forming ability has a dual function. The structure allows it to be firmly sorbed on the shell of the starch grain during the preparation (texturing) of the initial mixture. In the process of thermal activation, the shells break, amylopectin is released and interacts with the complexing agent, because gives it a more durable complex than the shell material. The role of the complexing agent is played by activated silicic acid used in water treatment practice / 10 /.
A significant role is played by the plasticizer of the mixture. The value of its content in the mixture affects the mechanical properties of the gel formed, but to an even greater extent - on the optical properties: color, transparency. The best results on the optical properties of the gel were obtained using polyvinylpyrrolidone with an average molecular weight of 12600 ± 2700 daltons as the main component of the plasticizer.
The use of polyvinylpyrrolidone can be justified, for example, in the perfumery, food, medical industries.
Given that the above ingredients are a good nutrient medium for microorganisms, the target bactericidal additive is added to the mixture. The food industry is characterized by the use of sorbic acid, pyrocarbonate. In the manufacture of perfumes and medical products, the choice of supplement depends to a large extent on the other components present.
Bactericidal additive allows to provide shelf life and storage, regulated by GOST for gluing (gelling) substances - 12 months. In addition, increases the safety of the use of a gelling agent in products of the food and perfume industry.
A gelling agent is prepared as follows. The necessary amount of activated silicic acid is preliminarily prepared by neutralizing a sodium silicate solution with a solution of hydrochloric or sulfuric acid. The neutralization is carried out in a reactor with stirrer with active stirring. The end of the process is monitored by pH. The solution is kept at a certain temperature. The precipitate formed is washed with excess water to a residual salt concentration of not more than 2 g / l. The precipitate is stored under a layer of water.
Starch for the preparation of a gelling agent is first washed from amylose with excess warm water with stirring.
The resulting silicic acid is transferred to a stirred reactor, a plasticizer is added (to obtain gels with low optical density it is polyvinylpyrrolidone with an average molecular weight of 12600 daltons), the bactericidal additive is sorbic acid or pyrocarbonate (for food applications of the agent) and mixed until a homogeneous mass is obtained. Pre-prepared starch with an undisturbed shell of grains and washed from amylose is added and mixing is continued until a homogeneous mass is obtained.
The finished gelling agent is obtained after drying the resulting mixture in a dryer and sieving large particles.
By changing the ratio of the ingredients in the gelling agent, the rheological, mechanical (strength) and optical (transparency) properties of the resulting gel can be widely changed.
The problem is also solved in terms of obtaining a gel with stable properties over time (lack of syneresis).
