В результате такой обработки происходит угнетение развития всех форм микрофлоры кроме кислоторезистентных форм грибов родов Aspergillus и Penicillium. Затем хлеб подвергают вакуумированию, в процессе которого происходит удаление сорбированного хлебом консерванта, и помещают в герметичную упаковку, например, из термоусаживающейся пленки. Это приводит к гибели грибов родов Aspergillus и Penicillium, которые как известно, являются аэробными. Обработанный таким образом хлеб не подвержен микробиальной порче более месяца, однако по истечении 21 - 24 суток начинается его черствение.
