При необходимости в солевой раствор могут быть дополнительно введены специи. Раствор тщательно перемешивают. Соотношение подготовленного раствора и филе предпочтительно используют 2:1, а температуру раствора в процессе обработки поддерживают не свыше 10oС. Филе выдерживают в солевом растворе до достижения массовой доли соли от 1,3 до 2,2 мас.%. Высоленное филе ополаскивают в слабом солевом растворе плотностью не свыше 1,05 г/мл и после кратковременной стечки направляют на первую подсушку. Филе подсушивают в сушилках с принудительной циркуляцией воздуха при температуре 25-30oС. Поверхность подсушенного филе должна быть сухой, а консистенция уплотненной и эластичной. Подсушенное филе нарезают на равномерные полоски в форме соломки вдоль волокон по длине филе. Ширину соломки выбирают с таким расчетом, чтобы после подкапчивания она составляла от 5 до 13 мм.
