Пример 2. Получение пектина осуществляют из того же сырья аналогично примеру 1, но с использованием препарата с константой пектиназно-целлюлазного комплекса 10, а ферментолиз осуществляют при 50oC в течение 120 мин. Получен пектин со степенью этерификации 80% и содержанием метоксильных групп 5,7%
Пример 3. Чесночную шелуху разбавляют водой до гидромодуля 1:5 и обрабатывают аналогично примеру 1, но с использованием препарата с константой пектиназно-целлюлазного комплекса 4, 5. Получен пектин со степенью этерификации 65% и содержанием метоксильных групп 3,6%
Таким образом, предлагаемый способ позволяет увеличить выход пектина и регулировать его технологические свойства за счет приемов, обеспечивающих изменение степени этерификации и содержания метоксильных групп.Example 1.
