Abstract
Description
The invention relates to the dairy industry and can be used at the stage of condensation of whey in vacuum evaporators.
In the process of thickening, intense foaming takes place and the associated significant loss of serum. The rate of loss of dry matter is usually 5 10% [1] This leads to environmental pollution and reduce the yield of the finished product.
There are various methods of defoaming, which include the addition of certain substances that destroy the foam [2,3]
A disadvantage of the known methods are the additional economic costs of obtaining and preparing antifoam agents.
The closest technical solution to the proposed one is a method involving the use of antifoam oleic acid in an amount of 2.5 l per 1 ton of the finished product [1]
However, the known antifoam is not effective enough.
The purpose of the invention is the reduction of losses of raw materials (whey) at the thickening stage due to the use of a more effective antifoam. Phosphatide concentrates are used as antifoam, which are introduced into the serum before thickening upon receipt of its vacuum-evaporation apparatus.
The essence of the method is as follows. Foams are dispersed systems consisting of gas bubbles separated by thin liquid films. In aggregate, a film frame is formed, which is the basis of the foam. The foam formation mechanism consists in the formation of an adsorption layer of a foaming agent (for example, protein molecules) on the interface.
а) истечения междупленочной жидкости;
б) диффузии газа между пузырьками;
The destruction of the foam occurs as a result of the following processes:
a) the outflow of inter-membrane fluid;
b) gas diffusion between the bubbles;
c) tearing foam films [4]
The mechanism of the destruction of the foam when phosphatide concentrates are added to the serum consists in their ability to displace the foaming agent (protein) from the phase boundary and cause tearing of the films. The introduction of phosphatide concentrates into the surface layers leads to a decrease in surface tension and promotes the flow of liquid from the films.
Phosphatide concentrates are a waste of the oil and fat industry; they include phosphatides. Phosphatides are compounds close to fats, which, in addition to fatty acids, include phosphoric acid, a nitrogenous base, and some compound that plays the role of an alcohol (usually glycerin). Being a surfactant, phosphatide concentrates break down foams well.
Example. Defoamer is introduced into the vacuum evaporator, where whey thickens.
As defoamer use phosphatide concentrates (the proposed option) and oleic acid (known option), which contribute in the amount of 0.001% of the thickened mass.
1. Comparative characteristics of these options in various types of raw materials are presented in table 1.
To determine the optimal dose of the proposed antifoam, experiments were carried out to determine the height of the foam column, depending on the mass fraction of injected phosphatide concentrates (Table 2).
As can be seen from table 2, the most preferred is the addition of phosphatide concentrates in an amount of 0.001 to 0.002%
Conclusions.
уменьшить потери сыворотки (сырья) в процессе сгущения на 10 15% по сравнению с известным способом;
Using the proposed antifoam allows you to:
reduce the loss of whey (raw materials) in the thickening process by 10 15% compared with the known method;
reduce condensate and wastewater pollution.
